Simple Caesar Dressing

In honor of my first posted recipe I dedicate this to my high school boyfriend’s mom (henceforth HSBM). Your salad creations were inspiring! Don’t let the simplicity of this recipe fool you. This dressing is addicting.

Caesar Dressing 

1/4 cup olive oil

2 tbsp. fresh lemon juice

1 large or 2 small clove(s) garlic, finely chopped

salt and pepper to taste

1 egg


Mix all ingredients together (except egg) in small bowl. Cover with towel or plastic wrap and let sit for at least 4 hours so the flavors can blend together. Overnight is best.

Right before serving whisk in the raw egg and drizzle over salad. Gently toss and serve.

*Note: Serve in a wooden bowl with a mixture of organic romaine and green leaf lettuce (I find the different textures of the lettuce adds to the salad).  Use homemade croutons made from sliced sourdough bread and freshly grated gradana padano or parmiggiano reggiano cheese.
